Pear & Tangerine Salad with Lavender Citrus Dressing

2 ripe pears, cored and cubed (peel only if skin is tough)

4 tangerines, peeled and sliced

4 c. fresh baby power greens (or baby spinach)

1 or 2 green onions, chopped (optional)

1 t. lavender honey

2 T. olive oil

1 T. fresh lime juice

1 t. dried lavender buds, coarsely ground

¼ t. salt

1/8 t. freshly ground white pepper

2 T. crumbled Bleu Cheese or goat cheese

1/3 c. chopped walnuts


Combine lavender honey, olive oil, lime juice, lavender buds, and salt and pepper in a medium bowl. Whisk until well blended. Add the pears, tangerines, and onions, stirring gently to coat with the dressing. Pour the fruit and dressing over the greens in a large salad bowl. Toss well to coat. Sprinkle with the cheese and nuts. Serve immediately. Makes 4 - 6servings.
